You can make your own perfect paella quickly and easily, thanks to this sumptuous recipe from Annie B.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-6052\" src=\"https:\/\/www.vintagetravel.co.uk\/blog\/wp-content\/uploads\/2016\/03\/Annie-Bs-Paella.jpg\" alt=\"Annie B's Paella\" width=\"700\" height=\"409\" srcset=\"https:\/\/www.vintagetravel.co.uk\/blog\/wp-content\/uploads\/2016\/03\/Annie-Bs-Paella.jpg 700w, https:\/\/www.vintagetravel.co.uk\/blog\/wp-content\/uploads\/2016\/03\/Annie-Bs-Paella-375x219.jpg 375w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/p>\n<p><!--more--><\/p>\n<p><em>To serve 8<\/em><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Olive Oil<\/p>\n<p>1 x red pepper \u2013 finely chopped<\/p>\n<p>2 x Onions \u2013 finely chopped<\/p>\n<p>3 x small Italian Green Peppers- finely chopped<\/p>\n<p>5 x large tomatoes, skinned, seeded &amp; finely chopped<\/p>\n<p>750gms chicken thigh \u2013 chopped<\/p>\n<p>1 x chorizo, sliced<\/p>\n<p>1.5 kilos raw, peeled Prawns (using shells for stock)<\/p>\n<p>500grams of sliced squid<\/p>\n<p>1 kilo \u00a0each Clams and Mussels<\/p>\n<p>3 cups of rice<\/p>\n<p>8.5 cups hot water simmered with 1 bay leaf &amp; prawn shells for stock + clam water<\/p>\n<p>\u00bd cup of Fino or Amontillado Sherry<\/p>\n<p>1 pinch saffron soaked in warm water<\/p>\n<p>1 tsp of Smoked Paprika<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Cook the mussels in boiling water until they open. Drain, pick and keep some open on shell for garnish. Repeat with the clams but reserving clam cooking liquid.<\/p>\n<p>Fry the chorizo, remove and then the chicken in the oil. Remove and keep to one side.<\/p>\n<p>Add chopped red pepper, stirring occasionally for 5 minutes. Add chopped onion and cook for 5 mins. Add chopped green pepper. Do not stir continuously as these vegetables need to brown. Add peeled, chopped and de-seeded tomato, along with the squid if using and 1 x teaspoon of salt. Bubble for 15-20 mins, stirring occasionally, until the tomato takes on the appearance of puree. Add the rice. Stir. Add liquid, Sherry, saffron and smoked Paprika.<\/p>\n<p>Bring to the boil and turn to simmer for 10 mins. Add prawns and push under the rice. Add the chicken. Added chorizo, shelled clams &amp; mussels<\/p>\n<p>Switch heat off and cover with newspaper or lid.
