Situated only a 10 minute drive from the sandy beaches, tiny coves and vibrant lidos that edge the nearby coast of the Adriatic Sea, Pajara Bianca is surrounded by ancient olive groves that seemingly stretch to the horizon. This rural landscape combined with proximity to the coast ensures days can unfold at an unhurried pace: a morning by the pool followed by a short drive to a seaside fish restaurant; an early morning swim in the sea; or a day spent at Pajara Bianca with evening apéritifs at a beach club - the choice is yours.

The straight lines of Pajara Bianca’s white façade contrast with the curved walls of the traditional pajara (an ancient stone shelter typical of Southern Puglia) by the pool. Inside, the atmosphere is bright and modern. Clean lines and an attractive minimalist design blend simplicity with warmth, creating spaces that feel instantly welcoming. The bedrooms open onto views of the pool or olive groves, with one bedroom having independent access from the covered terrace, making it perfect for grandparents, teenagers or anyone seeking extra privacy.

The kitchen/diner with its patio doors flows seamlessly outdoors, creating an ideal setting for leisurely lunches, sunset aperitifs and balmy evenings under the starlit skies.  A shady spot can be found on the covered terrace between the two wings of accommodation, a throughfare which will keep the area cool.

For restaurants and amenities, Carovigno (one of the famous ‘white towns’ of the region) is 8km away, with the other ‘citta bianche’ also in easy reach. The nearest beaches are Specchiolla, Morgicchio, Pantanagianni. Torre Santa Sabina (6km) is a laidback seaside village, with pizzerias and fish restaurants, whilst in the opposite direction, the nature reserve of Torre Guaceto is a protected area offering wild dunes, hiking trails and guided snorkelling tours.

  • Please note that, whilst there are external stairs to a roof terrace, access is not allowed due to the low walls and railings around the terrace.

Great Things to Do Near Pajara Bianca

La Citta della 'Nzegna

Carovigno is known as ‘La Citta della ‘Nzegna’ – the town of flags. It is renowned for its troupes of ‘sbandieratori’ who put on spectacular displays of flag throwing which are incredible to witness. Huge colourful flags are thrown between the men in displays of pageantry, accompanied by the sounds of drums and trumpets. If you get a chance to watch, do so - they are very impressive.

Trulli of Alberobello

The UNESCO World Heritage site of Alberobello is famous for its trulli: tiny limestone houses topped by conical roofs. Built without mortar, the houses mostly date from the 14th century, but the building technique has been used since ancient times. You will see them everywhere in this part of Puglia, especially in the Valle d’Itria but Alberobello is quite literally made up of them, there are over 1500. Visit early morning or late in the day to see them without the crowds.

Have a coffee ‘alla Salentina’, an iced glass with 5 ice cubes, a layer of almond milk and hot coffee.

Go underground and visit the ‘Grotte di Castellana’

The town of Castellana is famous for its network of caves, the largest in Italy. They are over 3km in length, go to a depth of 122m, and the temperature stays a constant 16.5C, so a refreshing place to visit when the outside temperatures soar. There are a couple of tours available: visit the full length or a shorter version of 1km.

Weekly markets

Puglia is known as the Garden of Italy, supplying the country with vegetables and fruit, so where better to shop than in one of the local weekly markets? Visit Ostuni on a Saturday, Cisternino on Monday, Carovigno on Tuesday, Wednesday Martina Franca, Friday Locorotondo. They take place in the mornings until lunchtime, when you can head to one of the local restaurants or back to the villa to enjoy all the local produce you have just bought!

Cartapesta - papier-mâché

Remember making things from papier-mâché in school? Well, Puglia is famous for it and has elevated it to a fine art! It was used to construct statues for the many churches and monuments being built in Lecce. In the North of Italy, marble was commonly available and therefore used but in Lecce and the surrounding area, there wasn’t the access to marble and so the craftsmen improvised! Visit the Church of Santa Chiara in Lecce to see the cartapesta decorations on its ceiling. There are still workshops in Lecce making papier-mâché items and throughout Puglia you will find examples both to see and buy.

Florence of the South

Otherwise known as Lecce, the capital of Puglia. It is a city that fully embraced the Baroque style of architecture. Much remains today making Lecce a wonderful city to walk around. Visit the Basilica di Santa Croce and see if you can spot, on its ornate façade, griffins, dodos, angels and sheep… 

Città Bianche

The white towns of the Valle d’Itria are charming places to wander around. They all have the whitewashed buildings and a ‘centro storico’ (historic centre) with a maze of narrow streets but each one is different. Spend a morning in each (followed by lunch of course) to discover its charm. Your nearest are Carovigno and Ostuni.
 

Torre Guaceto Nature Reserve

Named after the tower that was built in the 16th Century as part of a coastal defence system, the nature reserve is a protected area covering 8km of coastline. The area includes wetlands, dunes, marshes, Mediterranean maquis, agricultural land and is home to a variety of animals and birds. The coast and sea are also part of the protected zone, with the rocky seabed teeming with underwater fauna and flora. You can explore the area on foot and on bike, and go snorkelling and diving in the clear blue waters.

I do like to be beside the seaside

This stretch of the Adriatic coastline has a laidback feel, its often rocky shore dotted with impromptu sunbathing spots and little coves as well as larger bays where a town or resort has developed. There are both traditional fishing harbours and chic beach clubs, and plenty of restaurants serving the freshest of fish dishes.
